The Potato Feeds Europe

An Andean tuber conquered the Old World's kitchens slowly, then decisively. Where soils and climate suited it, the potato yielded more calories per field than any grain, and the difference is measurable in people: by conservative estimates it accounts for about a quarter of the growth in Old World population and urbanization between 1700 and 1900. It worked best where milk was on the table too, the two foods completing each other's nutrients, and worst where malaria drained the gain.

Why it matters

This is the Columbian Exchange weighed on a scale: one plant, moved between hemispheres, visibly bent the demographic curve of Europe and Asia. The potato also concentrated risk, a lesson Ireland's famine wrote in blood when one crop carried a nation. Food history and population history are the same history, and the potato is its cleanest natural experiment.

Dating & uncertainty

The potato crossed the Atlantic in the sixteenth century, but adoption was slow; the anchor marks the point from which its demographic effect is measured. Comparing regions suitable and unsuitable for the crop, before and after adoption, attributes to the potato roughly a quarter of the growth in Old World population and urbanization between 1700 and 1900.
